I love it when classic recipes are turned into faster versions that anyone can make at home! This fun appetizer takes two favorites and turns them into one simple dish that’s easy to make and tastes incredible. Perfect for game day, parties or any type of get-together.

Ingredients for Chicken Parmesan Sliders

Here’s what you’ll need to make this recipe:

Slider Buns & Chicken Tenders– I opted to use Gardein’s meatless Chick’n Sliders and really enjoyed them! My kids had no idea they were eating plant-based sliders and we all loved the tender, juicy taste. Whether you’re eating plant-based for a day, a month or forever, Gardein has the food that will deliver great taste on any occasion. 

Grape Tomatoes– instead of using marinara sauce, I used whole grape tomatoes that I baked alongside the chicken. You can’t beat the fresh, tangy flavor of roasted tomatoes!

Cheese– I used both Parmesan Cheese and Mozzarella cheese on my sliders for maximum cheesy flavor.

Olive Oil drizzle– I combined olive oil with minced garlic, Italian seasoning, a pinch of brown sugar and coarse salt for added flavor.

How to make Chicken Parm Sliders

Here’s how to make sliders:

Prep the Olive Oil Blend

Combine the olive oil, minced garlic, grated Parmesan cheese, Italian seasoning, brown sugar and salt together in a small bowl.

Bake the Chicken & Tomatoes

Preheat oven to 425°F. Place the chicken patties & grape tomatoes on a small baking sheet. Brush both with olive oil mixture. Bake for 15 minutes, turning half way through.

I baked my sliders in a Breville Combi Wave 3-in-1. It’s the size of a toaster oven but does SO much more! It’s an air fryer, convection oven and inverter microwave all in one appliance. It was so simple to use and I love crisping the  chicken and roasting tomatoes in the small, countertop appliance.

The Breville is perfect for my teen to use and I am really enjoying all the programmed cooking features. (Hello, perfect reheated pizza!)

Toast Cheese & Buns

Remove from oven. Top chicken patties with cheese and return to oven for 2-3 minutes, until melted.

Assemble the Sliders

Assemble sliders, placing the chicken on top of the bottom bun, then topping with 3-4 tomatoes and additional cheese, if desired. Place the top bun on the tomatoes and brush with olive oil. Repeat for remaining 3 sliders.

Bake an additional 4-5 minutes. Serve immediately.

Serving Sliders

Sliders are best served immediately, hot from the oven. They’re great for parties too, where they can be kept warm and served later. Just store in an airtight dish, or cover with foil to retain heat.

I love serving sliders for game day get-togethers, parties or even after school when all the teenagers hungrily descend on your house!

  • 1/4 tsp coarse salt
  • pinch of brown sugar

This was one of my mom’s weekly dishes growing up. They are so good! Our friends would hear we were having chicken planks and conspicuously hang around our house until Mama called us in for supper so they could secure an invite. After all, aren’t Southerners known for their fried chicken?

The taste and texture of this dish are so amazing, you’d never know the ingredients were so few and so simple, and you will be surprised at how much better they taste than any other chicken finger you’ve had!

Ingredients are simple: Saltine crackers, oil, eggs, and chicken.
Please don’t get low salt or no salt crackers, just trust me on this.

Crush a sleeve of crackers and put half of them in the bowl, reserving the other half.

Pour about 1/4 inch of oil in the bottom of a skillet and let it heat up over medium heat.

Place chicken breasts inside two ziplock bags and beat out thin with the blunt end of a meat tenderizer or mallet. I use two ziplock bags because one usually ends up splitting open in the course of my beating. I guess I have a lot of untapped aggression 😉. They will be nice and flat and thin, about 1/4 of an inch.

Crack eggs into bowl and beat them well.

Cut each chicken breast into three strips. Set up an assembly line of the three ingredients: Chicken, eggs, cracker crumbs.

Dip each strip into your egg mixture, on both sides.

Then press each side into cracker mixture.

Here are our breaded chicken fingers, all ready to go.

Fair warning that after you do several pieces, your cracker crumbs will start to get gunky. That is when you add in your reserved crumbs.


Drop into hot oil. I cook mine on a medium to medium high heat. I like to use a heavy skillet for this. Turn after they brown on one side and continue cooking

When they get nice and browned on both sides they are done.


Remove from the pan and place on paper towel lined plate.

These are wonderful with any dipping sauce, or on their own.

Personally, I’m a ketchup gal. My husband likes honey mustard. Sara Jane (our bonus daughter) likes ranch, and Katy likes ’em plain.

  • 1 -3 Sleeves Saltine Crackers
  • 2 eggs
  • Cooking Oil

Instructions

  • Pour oil in large skillet to a depth of 1/4 inch. Heat on medium while you prepare the chicken.

  • Place chicken in gallon ziplock bag and beat out until 1/4 inch thick. Crack eggs into bowl and beat with fork. Crush saltines and put in a separate bowl.

  • Cut each chicken breast into three strips and dip each piece first in egg mixture, then in cracker crumbs, being careful to coat completely. Drop each piece into oil and cook, turning once, on medium to medium high heat until browned on both sides. Drain on paper towel lined plate.

Easy Appetizer Ideas

I personally think you can never have a shortage of easy appetizer recipes. Not only are appetizers great for, well, appetizers 😉 but they also make an amazing lunch or snack for the little tummy’s in your life! Chicken Parmesan Bites are no exception to the Easy Appetizer rule.. this may be the easiest!

If you have an air fryer, these little bites can become even easier, if that is even possible. I also love how we can take this one recipe and idea and adapt it into many other appetizers! Substitute bbq sauce, honey mustard, sweet and sour or wing sauce for the marinara sauce and you have a completely different dish!

How to make Chicken Parmesan Bites

To make theses Chicken Parm Bites, the first thing you’ll need to do is purchase your favorite brand of popcorn chicken. You can honestly make these as small and pop-able as you’d like. If you want to use larger chicken strips, be my guest!

Once you have picked out what chicken you’d like to use, we need to cook it until they are nice and crispy. As I mentioned earlier, I like to use my air fryer for this, the consistently have a great crispy texture that is hard to achieve in the oven.

Once the chicken is baked, hot and crispy, arrange in a serving dish. Spoon a small amount of your favorite marinara sauce onto the chicken and then top with shredded mozzarella cheese.

Now toss it in the oven and broil for a few minutes until the cheese is melty, bubbly and delicious. Pull out of the oven and serve immediately with toothpicks.

Can I make this Appetizer a meal?

YES! I absolutely love doing this. I will add a bit more marinara sauce and then scoop and serve over pasta instead of eating with a toothpick. This is always a hit with my kids as a meal.

  • 1/2 cup marinara sauce
  • 1 cup mozzerella cheese shredded

Instructions

  • Bake the popcorn chicken according to package directions or using your favorite method.

  • Spoon a small amount of marinara sauce over each peice of chicken.

  • Top with the shredded mozzerella cheese.

  • Broil for a few minutes until the cheese is melted.

  • Serve immediatly with toothpicks.
