Crockpot Breakfast Casserole is perfect for special occasions (like Christmas morning!), but it is simple enough to make for just a regular weekday morning too. I love being able to serve my kids a filling breakfast before they rush off to school and they absolutely love this recipe.

I don’t know about all of you, but getting kids up and ready in the mornings can be a little chaotic and sometimes everyone is just grabbing whatever they can find to eat. I just feel so much better when my kids get a really good breakfast before they head off for the day.

This casserole is also hearty enough to eat for dinner! We love eating breakfast for dinner and with a little prep in the morning, you can have breakfast-for-dinner ready to eat right at dinner time.

Simple Ingredient swaps for Breakfast Casserole

One of the things I love most about this recipe is how versatile it is. The hash browns and eggs are kind of a must, but beyond that, you can easily swap things out based on your family’s preferences (and what you have in the fridge)!

Swap out the meat: The recipe calls for sausage, but you could easily swap that out with ham or bacon or even leave out all the meat if you prefer. Or maybe even try a combination of meats – ham, bacon and sausage all taste great together!

Swap the cheese: The original recipe calls for mozzarella and Parmesan, but you can use any cheese you want! We really like a combination of cheddar and mozzarella, but you can use all cheddar. Or swiss. Or Monterey Jack. Or pretty much any combination of cheese you like better.

Swap the veggies: I love the sun-dried tomatoes and green onions in this recipe, but you can leave them out and go veggie-free if you prefer. Or add as many veggies as you want. Add peppers, onions, mushrooms… all great in this recipe!

Ingredients in Slow Cooker Breakfast Casserole

Frozen shredded hash brown potatoes – You’ll need a bag of hash browns that is between 26 and 32 ounces. No need to thaw the hash browns before adding to the casserole.

Pork sausage – I usually use plain pork sausage, but you can use Italian sausage or maple sausage. Or leave the sausage out altogether. Or swap in bacon or ham…or a combination of all 3!

Mozzarella and Parmesan – These cheeses go so well in this recipe, but you can use any kind of cheese or combination of cheeses you prefer. We love cheddar in this recipe!

Sun dried tomatoes – These come in a jar that can be found near the olives at the store. Usually on the top shelf! I love the flavor and texture of these tomatoes!

Green onions – Green onions add a perfect flavor to the breakfast casserole, but you can use a different variety of onion if you prefer. Just make sure they are finely chopped before adding to the recipe.

Eggs – Can’t forget the eggs! Holds everything together and adds so much protein to the recipe.

Milk – I use 2% because that’s what we have in the refrigerator, but pretty much any type of milk will work fine.

Salt and pepper– Adds the perfect amount of seasoning to the breakfast casserole.

How to layer a breakfast casserole in the slow cooker

How to make Crockpot Breakfast Casserole

Spray a large (6 quart) slow cooker with cooking spray. Layer half of the hash browns on the bottom of the slow cooker.

Top with half of the sausage, mozzarella, Parmesan, sun-dried tomatoes and green onion. Repeat layers.

Beat eggs, milk, salt and pepper in a large bowl with a wire whisk until well blended.

Pour evenly over potato-sausage mixture.

Cook on low for 8 hours and on high for 4 hours (or until eggs are set).

The thing I love about breakfast casserole is that it is a pretty well-balance meal all by itself! You’ve got the eggs, meat, cheese and veggies…all in one dish! I do love to add some fresh fruit or a smoothie to go on the side – so simple and adds the finishing touch to a perfect meal.

CAN I USE FRESH POTATOES?

Yes, you can use fresh potatoes, although I recommend soaking them after washing and grating them. Soaking in cold water will remove some of the starch and allow your hash browns to cook without going mushy or discoloring. Just make sure to drain them well and pat dry with a paper towel to get rid of the extra moisture before adding the potatoes to the recipe.

It’s super simple to prepare and after a few hours of cooking, this slow cooker ham and white bean soup tastes (and looks) incredible.

What is Crockpot Ham and Bean Soup?

This ham and navy bean soup is a simple broth soup filled with shredded or chunked ham, a few veggies and a lot of those white beans we like. Every bite is packed with protein, flavor, and blend of texture that work well with one another. You can use leftover holiday ham to create this simple soup recipe or buy ham for the occasion, either way- it’s worth it to try.

-Celery: We need 2 stalks of celery (diced) to add a little green and texture.

Place your ham bone or ham hock in the crock pot. Add the beans, carrots, celery and onion on top.

Cover the beans and ham bone with water. As it cooks, this will become a naturally flavorful broth.

Turn the crockpot on high and cook for 6-8 hours or until the beans are tender.

Take the ham bone out of the pot and then remove all of the ham from it. Shred or dice the ham and then return it to the pot.

Season the soup with salt and pepper to taste.  Serve & enjoy!

Ingredients

How do you thicken ham and bean soup?

To thicken soup, ladle out 2-3 TBSP broth from the soup. Stir in 1 TBSP cornstarch. Return broth to soup and stir. Replace lid on slow cooker and let cook until thickened to desired consistency.

You can always take a cup of soup and run it through a blender or food processor until creamy. Then return it to the pot and stir it in. While the appearance will change, the texture changes as well. The crushed beans will help to make the soup feel thicker without any additional ingredients.

Do I need to soak beans if cooking in slow cooker?

You don’t have to soak the beans, but you could. With soaked beans you can reduce the amount of actual cooking time. Whether you choose to soak or not is up to you, just make sure you don’t skip the wash and sorting beans step because that will help to remove dirt, rocks, and other debris that end up in dried beans.

You can. This soup is freezer friendly. I recommend storing cooled soup in freezer-friendly containers for up to a few weeks. Then, thaw and cook or put it in a pot on medium/low until it’s cooked through.

I’ve seen several recipes for crockpot lasagna, but to be honest, most had mixed reviews. Not only that, but I wanted an Alfredo lasagna where I could add in some veggies from the garden. So after reading a ton of different recipes and comments, I came up with this easy recipe and oh my heavens~ it’s a winner!! It’s so delicious and the noodles and vegetables were cooked perfectly. It’s not dry and has a wonderful flavor. It came together really quickly and I have a meal’s worth of leftovers, which is a bonus! My kids and husband were all raving about it, so it will certainly go into our normal rotation of meals.

-1 9-oz box No Boil Lasagna Noodles

-8 oz sliced mushrooms

-1 zucchini, sliced thin

-1 16-oz container cottage cheese or ricotta cheese

-1 cup mozzarella, divided in half {half goes on top of the lasagna}

-1 cup Parmesan cheese, divided in half {half goes on top of the lasagna}

-1 egg, beaten

-1 tsp dried parsley

-salt & pepper

Slice your vegetables and dice the chicken.

Combine the ingredients for both the sauce mixture and the cheese mixture in separate bowls t=so that they’re ready to go.

To layer your lasagna, the noodles will be divided into 3 portions. You can set them into 3 groups now to make it easier when putting it all together.

The sauce mixture will also be divided into thirds.

The cheese mixture will just be divided in half, as will your vegetables. It’s okay to overlap the noodles- just try and cover as much as the crockpot as you can. I usually lay out a few, and then brake the others into pieces to fill in the gaps.

Arrange everything close to your crockpot so it’s easy to grab and use.

Once you have everything layered in your crockpot, turn the heat onto low, put the lid on and cook it for 3 hours.

Once 3 hours have passed, take a fork and make sure the top layer of noodles are all submerged in the dish and they aren’t drying out. {Push it down a little if you need to.} Add the remaining 1/2 cup of mozzarella and Parmesan cheeses to the top of the lasagna. Replace lid and continue cooking for another 30 minutes.

Turn the crockpot off and then let it sit for about 20 minutes or so before serving. {This allows the lasagna to soak up more liquid and helps the pieces hold together better.} Cut and serve.

I prefer store-bought  Alfredo Sauce that’s kept in the refrigerated section, as opposed to the jarred variety. It tastes more homemade and fresh to me.

How Long Are The Leftovers Good For?

After the meal is completely cooled down, you can store it in an airtight container and place it in the fridge for up to 5 days. You can reheat it in the oven at a low temp or in the microwave until it’s been heated through.
