Delicious crockpot chicken fajitas have all those great fajita flavors, but none of the work. A simple dump and cook recipe for an excellent easy Mexican dinner. Let the crockpot do the work and skip any marinading or sauteing.

Introduction and My Rating

I’m always on the search for a good recipe, but extra points for Mexican, crockpot, or chicken. I have a triple winner here. Inspired by an Allrecipe.com recipe that is from Reynolds foil trying to get you to use their crockpot liners. I skipped the liner but did a few other changes also.

With only four main ingredients plus a few spices, even the most inexperienced home cook can handle it. Everybody will want the recipe, and the family will love it.

Serve on tortillas, in burrito bowls, or on salads. Goes well for low fat, keto or low carb diets.

🐓The Chicken

I suggest skinless boneless chicken breasts trimmed well. Cut the chicken cross-grain and only about 1/4 to 3/8 inch thick. If the breast is thick, filet them first. Finally, trim the length across the grain to keep them about 1 inch or a little longer.

You can use skinless boneless thighs, if you wish, but I prefer to cook thigh meat a bit longer to 175° to 180°.

You can use precooked chicken, cut up or shredded. Use 3 to 4 cups and put it in the crockpot and mix well at about 75% into cooking.

♨️Crockpot

This fits nicely in a 3 1/2 quart crockpot. You can use a bigger crockpot if you want. If you are making a double recipe, use 6-quart or larger crockpot.

✔️Tips

Instead of using packaged seasoning, which is mostly fillers, I added my own spices to kick up the flavor. Also, the salsa adds a lot of great taste most other similar recipes lack.

Traditionally, bell peppers and some onion are used. Cut the veggies about 3/8 inches wide. You are free to use other vegetables, but they may need different cooking times. We like lots of meat, but if you are more of a veggie person, you can add another pepper.

There is lots of “juice” left at the end of cooking. I can’t think of any use for this, so get your chicken and veggies out and discard the fluids.

Good refrigerated for 2-3 days. Reheat in a microwave.

Good frozen sealed well flr 2-3 months.

🔪Instructions

Pro Tips

This is one of those rare meals that is not only good for you, but it’s very tasty, very hearty and it rings all the familiar comfort food bells…it freezes well too!!

This recipe is a breeze to make because you put most of the ingredients in the crockpot the night BEFORE you want to serve it (no need to pre-soak the beans) and then the next morning, you just add the chicken and carrots and let it cook all day!! It will make your house smell scrumptious!!


1 1/2 cups DRY Great Northern white beans (rinsed but not soaked)
3 boneless skinless chicken breasts (or several thighs)
1 cup chopped onion (sauteed)
4 ounce can mild green chiles (I use Ortega brand) 
2 cups grated carrots
3 teaspoons chili powder
1 teaspoon ground cumin
1 clove garlic minced
1/2 teaspoon dry oregano leaves
1/8 teaspoon cayenne pepper (more if you like “heat”)
1 teaspoon salt (use salt ONLY if you are using salt free broth)
1/2 teaspoon black pepper
6 cups chicken stock (see note below)
1 cup Monterrey Jack Cheese shredded

Wash and sort the dry beans (do not pre-soak) and put them in the crockpot. Add the stock, sauteed onion, seasonings and green chile’s. Cook on LOW setting overnight (or about 8 hours).

In the morning, remove about a cup of the beans and mash them thoroughly. (I put them in the blender)  Return the mashed beans to the crockpot; this will thicken up the broth in the chili.

Cut the raw chicken into large pieces and add it to the crockpot along with the shredded carrots.  Cook this on LOW for 6 to 8 hours depending on how big your chicken pieces are.

About 30 minutes before you want to serve the chicken chili, add the shredded Monterrey Jack cheese and stir. This adds such a wonderful taste and texture.

NOTE: If you use salt free chicken broth, go ahead and put the teaspoon of salt into the chili. Taste it again after it is finished cooking (and you’ve added the cheese) to see if it still needs more salt.   If you use chicken broth made from bullion, don’t add ANY salt to the recipe, as the bullion broth is already quite salty.

NOTE: I hope you don’t leave out the grated carrot, it really adds a wonderful taste and texture to the chili.

NOTE: We are fairly timid when it comes to spicy heat in our food.  I use an 1/8 teaspoon of cayenne and it was absolutely perfect for us. If you like more heat in your food, just add more cayenne.


NOTE: This makes a big pot of chicken chili. It freezes well.

Crockpot Sausage Tortellini Soup is one of my favorite soup recipes. The flavors are amazing and I love how easy this soup is to put together. You do have to cook the sausage in advance, but everything else (including the tortellini) can just be thrown in the crockpot and left to cook.

The recipe also calls for cream cheese, which adds such a wonderful creaminess to the soup and of course extra cheesy flavor too! To me, this soup recipe almost tastes like lasagna, but it’s so much easier to make.

Ingredients in Crockpot Sausage Tortellini Soup

You will need Italian sausage for this recipe. I also use mild sausage, but if you like a little more kick, go for it! You could also use ground beef or even chicken if you prefer. If you are trying to avoid meat, you can make the soup without it and it’s still delicious!

I use fresh tortellini in the recipe -the kind that you find in the refrigerator section of the grocery store, usually next the cheese. I prefer the taste of this tortellini and it is already a lot softer, so it tends to cook a lot faster than frozen tortellini or the dry tortellini that you can buy from the store that is next to all of the other pastas. You can use those types of tortellini, but you will have to either boil the tortellini slightly before adding to the soup, or you will have to extend the cooking time by 2-3 hours to make sure the pasta gets cooked. I use cheese tortellini, but you could definitely use a different variety if you prefer.

Fresh spinach is the next ingredient in the soup. You could probably use frozen, but make sure it is well drained before adding to the soup.

You will also need 2 cans of diced Italian style tomatoes. If you have regular diced tomatoes, they will work fine too, but the Italian style tomatoes already have some spices added that will just add that much more flavor to your soup.

You will also need 4 cups of chicken broth which is convenient since chicken broth comes in 32 oz (4 cup) boxes at the store. You can also use homemade chicken broth if you prefer, or you can use chicken bouillon to make the equivalent of 4 cups.

The next ingredient is a block of cream cheese. I usually have regular cream cheese on hand, but you could easily use a reduced-fat or no-fat variety. Just make sure the cream cheese is cubed before adding to the soup so that it can melt easily.

The last thing to add to the soup is the spices. This soup recipe calls for dried basil, dried oregano, salt and ground black pepper.
