I have been using vanilla extract for quite a while now, I find it more aromatic than the vanillin, but if you want, you can clearly replace it with this. For this dose, one sachet will be more than enough!
Each region, town, neighborhood has its own version of traditional sweets in general and castagnole are no exception! There are those who put aniseed liqueur, lemon peel … clearly you can choose the one you prefer.
With a round mold, of the size you like (mine is a 3 cm tea filter), you can form many rods from a sheet one and a half cm thick and then round with your hands!
The first castagnola that passes into the sugar is always perfect: the sugar remains well grained and clear… As you proceed, you immediately notice that the sugar on the castagnole thins out and becomes dark and lumpy.
How can you avoid it?
Put a little sugar in a narrow bowl and put the dry but still hot castagnola inside. Turn it on all sides to make the sugar stick well, several times. If you put the right amount of sugar, it will run out quickly and you can add more, otherwise, if it stays in the bowl and starts to darken and clump, change it!
In this way all the damselfish will be perfectly sweetened and you will not have wasted more sugar than necessary!
