Want to know my secret for best-ever homemade fried rice? You can probably guess it. BUTTER. Yep, butter. You’ve got to try it. Making fried rice is really simple and I love how I can adjust the recipe to suit our family’s tastes. We love more eggs and less soy sauce. It’s incredibly versatile- taste it and adjust as you’d like.

This is one of my favorite quick & easy dinners and the good news is- the rest of my family enjoys it too! It’s one of my “leftovers” dinners because I usually make it with chicken and rice leftover from another meal. The rice can even be stored in the freezer until you’re ready to use it! Just defrost it and it’s ready to go. A couple of the ingredients are flexible- I like it with more egg and less soy sauce. Taste it though and adjust to your family’s liking! I usually serve this with store bought egg rolls or pot stickers on the side.

What kind of rice to use for Fried Rice recipe?

I prefer making fried rice with regular long-grain rice. You can also use Jasmine rice or even brown rice, just make sure it’s cooked the day before you plan to make your fried rice. Just FYI too, I’ve used sushi rice, or short-grain rice (our popular brand is Calrose or Botan rice) to make fried rice. It tastes just as good, you just have to cook it quicker- over higher heat for less time, so it doesn’t turn soggy.

Fried Rice with Day-Old Rice

Fried Rice requires rice with a lower amount of moisture, so it’s best to use day-old rice (or 2-4 day old rice!) I often make a big batch of rice for dinner one night (to serve with Mongolian Beef or Easy Chicken Curry) and then freeze the rest in 6 cup increments, so it’s ready to be made into fried rice. Just thaw out frozen rice and use it to make fried rice cold- no need to reheat!

Fried Rice with Warm Rice

If you don’t have day old rice to use and you want to make fried rice, spread it out on a cookie sheet and bake it in a 250 degree oven for 10-15 minutes, cool it for 10 minutes and then place it in the freezer for 20 minutes. You can then use the cold rice in this fried rice recipe.

Ingredients needed to make Fried Rice:

Assemble the following ingredients together to prepare to make easy fried rice:

–3 TBSP butter

–1/2 cup diced onion

–3-4 eggs

–1 cup diced cooked chicken

–6 cups cooked, cold white rice

–1 12-oz bag frozen peas & carrot vegetable mix, cooked

–3-4 TBSP soy sauce

–1 TBSP sesame oil

Heat butter in a large skillet over medium high heat. Once butter is melted, add in onion and cook for 2-3 minutes, until translucent. Add in eggs, one at a time, stirring before adding another one.

Once egg is pretty much cooked, add in chicken and stir often for another 2-3 minutes. Add in rice and stir to combine. Add in vegetables. Cook, stirring often for another 5-6 minutes, until rice is hot. Add in soy sauce and stir to combine, cooking an additional 5 minutes.

 

Remove from heat. Drizzle sesame oil over rice and stir once more. Serve hot!

Time Saving Tips for Making Homemade Fried Rice

Here’s how you can make our recipe for fried rice even faster.

The trick for making fried rice even quicker is to have several steps going on at once. Here are a few ideas:

  1. Use pre-diced onions. You can purchased them in the produce section of most large grocery stores, or by the frozen vegetables. No need to thaw, just add them frozen directly to the hot butter.
  2. Get the frozen bag of peas & carrots that can steam directly in the bag. Microwave it while you’re cooking the onions.
  3. Use store-bought rotisserie chicken, diced into smaller pieces.

Start by removing the thawed steak from the refrigerator and let sit for about an hour. This allows the meat to come to room temperature, making for a more evenly cooked steak.

Heat a cast iron skillet to medium/medium high heat. You can use any type of skillet, but I’ve found that a cast iron skillet can get a better crust on your steak, without over cooking it.  Also, if you are going to finish the steaks off in the oven, you don’t have to transfer the steak to an oven safe dish. You can just place the whole cast iron skillet in the oven. If you are going to finish the steaks off in the oven, now would be the time to preheat it to 400 degrees.

Once the skillet is heated up, place your steak in it and let it cook for 5 minutes. Turn it and let it cook on the other side for 5 more minutes. If you are cooking thicker steaks, you can also lay the steak on its long side and cook for a minute on each side. Use a meat thermometer and the steak temperature chart below to cook your steak perfectly. 

After the steaks have been cooked on the stove top, spoon the butter over the steaks, then rest and serve.

Thicker steaks can finish cooking in the oven. Place the entire cast iron skillet in the oven until it is done to your preferred temperature. If you did not use a cast iron skillet, you will need to transfer your steak to an oven safe dish. Cook for an additional 2-5 minutes, then spoon the butter over the steaks, rest and serve.

Yes, steaks should rest for a few minutes after cooking. Once the steak is done cooking, remove from heat, loosely cover with aluminum foil and let rest for a few minutes. This allows the juices in the steak to redistribute, giving you a more tender, juicy flavorful steak.

How many steaks can cook in a pan at once?

You can cook as many steaks as will fit in your skillet.  But the more steaks you put in the skillet, the lower the surface temperature of your skillet will be. This will cause your steaks to cook slower and you may not get that nice crust on the outside.  Also, the ingredients listed are for a single steak. If cooking more than one steak, make sure to increase the ingredients accordingly.

How to season pan-fried steak

You can use any seasonings you like, but don’t go overboard. You don’t want to over power the taste of a good steak. While I primarily only use salt and pepper, sometimes I’ll substitute in seasoning salt instead of regular salt, or add a touch of garlic powder, maybe even some natures seasoning.  Keep it simple though.

If you have a bunch of cold, leftover rice around, you
should probably just use the classic method, but if you don’t, this easy oven
method for making fried rice will not only produce something very similar in
taste, but the texture of your rice comes out perfectly every time.

That’s because we’re using the same method as we do for rice pilaf, where the grains of rice get coated in fat before absorbing the cooking
liquid. This ensures plump, tender, separate grains, and never sticky clumps of
rice. By the way, this technique will work no matter what you include in your
mixture, as long as you’re using long-grain rice, and cooking it in a similarly
sized pan.

That’s not to say you can’t use other types of rice, or
other size pans, but that will change the cooking time, so just something to
keep in mind. Also, as I warned in the video, some sesame oils can be very
strongly flavored, and if that’s the kind you have, the amount I poured over
the top of my egg could overpower the dish, so be careful. Okay, that’s it for the
warnings. I really do hope you give this baked “fried” rice a try soon. Enjoy!

Ingredients for 4 large portions:

(I used a 11.5” x 8” x 2.5” pan, but your standard 9” x 12”
casserole dish will work the same)

2 cups white long grain rice

2 tablespoons canola oil

1 tablespoon sesame oil (mine was mild, so you may need to
adjust this down)

optional 1/2 to 1 teaspoon salt, depending on the saltiness
of your broth and ham.

3 cloves crushed garlic

1/2 cup sliced green onions

1/2 cup diced peppers

1/2 cup diced carrots

1/2 cup green peas

3 cups boiling hot chicken broth

3 tablespoons soy sauce

2 teaspoons chili paste, optional

– Bake at 400 F. for 32 minutes, and let rest for 10 minutes
before unwrapping and fluffing.

– To brown the top, place in a 475 F. oven for 7 to 10
minutes, or under the broiler for a few minutes until the surface is nice and
crusty.
