Simple ingredients combined in the microwave for a fast, delicious peanut butter treat.I love pretty much all types of fudge, but I’ve come to really appreciate these super easy fudge recipes! I mean, years and years ago when I had oodles of free time and energy to try recipe after recipe, I could enjoy the process of testing fudge recipes. But now? I need it to come together fast and just taste delicious. This Peanut Butter fudge fits the bill- it can be ready in as little as 20-30 minutes!

I topped mine with crushed salted peanuts and mini chocolate chips. They both add a nice crunch to the fudge that my family really enjoyed. You’re welcome to just leave it plain though.

Here’s what you’ll need to make this fudge recipe:

–peanut butter- I used creamy, but I think Chunky peanut butter would be amazing

–butter- no need to soften! I used salted butter.

–salt

–vanilla extract

–powdered sugar

–toppings- I used chopped salted peanuts and mini chocolate chips. These are optional, but they look and taste amazing!

Making this fudge is so simple! Here’s what you need to do:

Combine the butter and peanut butter in a large mixing bowl. Microwave for 90 seconds.

Stir in salt, vanilla and powdered sugar. Mixture will be think but very soft.

Spread into prepared pan. Sprinkle with toppings, if you’d like.

Let sit to harden. If you’re in a hurry, you can place the pan in the fridge or freezer to have it set faster.

Cut into squares & enjoy!

Yes! Freezing fudge is easy. Just double wrap it in plastic wrap or parchment paper, then store it in an airtight container. Will stay fresh for 3 months. Thaw and cut into squares to serve.

How long does Fudge last?

If stored in an airtight container on the countertop, fudge will stay good for about a week. It does slowly dry out, so I recommend enjoying it within 4-5 days.

If you’d like to make this recipe for fudge on the stove instead of in the microwave, it’s easy. Add the peanut butter and butter to a medium sized saucepan. Heat on medium, stirring until mixture is completely melted. Remove from heat and proceed with the rest of the recipe. That’s it!

Can you use Natural Peanut Butter in Fudge?

Yes, you can use natural peanut butter in this fudge recipe. Just make sure you stir the peanut butter first so that any oil is mixed in before proceeding with the recipe. It might look separated even after melting with the butter, but once you add the powdered sugar, it’ll be perfect!

Ingredients

  • 1 cup peanut butter
  • 1 cup salted butter
  • 1 tsp salt
  • 1 tsp vanilla extract
  • 3 1/2 cups powdered sugar
  • 1/4 cup chopped salted peanuts optional
  • 1/4 cup mini chocolate chips optional

Instructions

  • Line an 8×8 pan with parchment paper or foil. Spray with non-stick spray and set aside.

  • Combine peanut butter and butter in a mixing bowl. Microwave for 90 seconds.

  • Stir in salt, vanilla and powdered sugar. Mixture will be thick but soft.

  • Spread mixture into prepared pan until surface is flat and even.

  • Sprinkle with chopped peanuts and/or mini chocolate chips. Press toppings gently into fudge. (Toppings are optional!)

  • Let cool to set. You can also place pan in the fridge or freezer to help it set faster.

  • Cut into small squares & enjoy!

Fudge Striped Cookie S’mores have the perfect balance of cookie, marshmallow and chocolate! Make these s’mores in the oven, microwave or around the campfire!

A couple of years ago, some friends introduced us to an ingenious way of making “s’mores”- all you need is a bag of marshmallows and a box of fudge striped cookies.  That’s it! Fudge Striped Cookie S’mores are so easy to make. The chocolate to marshmallow to cookie ratio is absolutely perfect too which is absolutely crucial for a perfect s’more!

I feel like I’m cheating a little bit in posting this as a “recipe” since it only has 2 ingredients and is so simple, but I wanted to share this idea with everyone since it has become a family tradition in our home!

I absolutely love s’mores, but I only like them when the chocolate is completely melted and that almost never happens when you roast marshmallows in the great outdoors.  You end up with a well roasted marshmallow, cold chocolate and then the graham crackers are always breaking because the chocolate is too hard.

You can make these s’mores the traditional way by roasting marshmallows over a campfire, you can make them in the microwave, or you can use an oven…all of these methods produce the same gooey, delicious results! This is hands down, the easiest way ever to make s’mores!

  • 6 large marshmallows (the regular large ones or the S’moreMallows)
  • 12 Fudge Stripes Cookies

How to make s’mores in the oven

Place half of the cookies upside down (chocolate side up) on a cookie sheet and then place the marshmallows on top of the cookies.  (I used parchment paper on the cookie sheet to make the clean up easier, but it will work fine without too!)

Top each marshmallow with another cookie right side up and then place in the oven at 300 degrees for about 5-7 minutes.  As soon as the marshmallows are getting soft and melted, they are ready to eat!

Making s’mores in the microwave works best if you just make one s’more at a time. Assemble the s’more with the marshmallow in between two cookies and place on a microwave-safe plate. Microwave for 30 seconds or until the marshmallow is soft and gooey.

How to make s’mores around the campfire

Place a large marshmallow on a stick and get it as close to the coals of the campfire as possible without touching them (or putting the marshmallow in the flames!). Roast until just barely golden brown, unless you are one of those people who like your marshmallows dark brown/black!

Place the roasted marshmallow between 2 Fudge Striped cookies and lightly press together for about 15-20 seconds or until the chocolate on the bottom of the cookies begins to melt a little bit.

What kind of marshmallows work best in s’mores?

Regular large marshmallows work very well in s’mores. Recently, I have loved using the S’moreMallows to make s’mores with and they work so well because they are flat so it makes it easier to balance the top cookie on top of the marshmallow!

If you use the S’moreMallows, just be warned that it is a lot of marshmallow and it will ooze out of the cookies quite a bit when melted. If you don’t want quite so much marshmallow, you can cut them in half. It all depends on how much marshmallow you prefer!

Fuss Free Christmas Fudge

 

Ingredients

  • 16 ounce can store bought cream cheese icing
  • 12 ounces vanilla morsels (like white chocolate chips)
  • Red and Green Gel* Food Coloring

Instructions

  1. In microwave safe bowl, place vanilla chips. Microwave at one minute increments, stirring after each, until melted and smooth.
  2. Open icing container and remove foil lid. Place in microwave for about one minute. Stir into melted morsels until well blended.
  3. Quickly divide fudge into three parts. Die one part red and one part green. Spread each color, one at a time, into greased 8×8 pan, topping with subsequent color. Sprinkle with Christmas sprinkles, if desired. Allow to cool completely before cutting.

Notes

*Must be gel food coloring. This is available in craft departments near Wilton products and many grocery store baking aisles. Just make sure it says “gel” on the package.
