Hey friends! Last week I had a fun idea and developed a narrative of a sock monster who wanted to redeem himself. I went shopping and picked up some socks in fun patterns, printed off a few copies of the letter below, and shipped out my little packages anonymously to some of my young (and not so young) friends as a fun little surprise. Everyone loved their packages, especially the teenagers (didn’t see that coming)!

So I thought I’d share the letter with you in case you had anyone who could use a little surprise in their mailbox. For inspiration, I sent socks to my mother, two of my friends who live out of state, all of my nephews and nieces, and some other young friends I have in our

Mint Chocolate Chip Cookies made with pudding mix, mint extract & chocolate chips. Lovely cookie recipe perfect for those who love mint chip ice cream! Mint Chocolate Pudding Cookies are great for anyone who love the mint-chocolate combination. The addition of pudding yields a soft cookie with wonderful texture. Perfect for the holiday Christmas cookie exchanges! MINT CHOCOLATE PUDDING COOKIES

Mint Chocolate Chip Cookies made with pudding mix, mint extract & chocolate chips. Lovely cookie recipe perfect for those who love mint chip ice cream!

Ingredients

  • 1 cup sugar
  • 1/2 cup butter softened (1 stick)
  • 1 egg
  • 1/2 cup sour cream
  • 1 small box instant vanilla pudding mix 3.4 oz
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 2 cups all-purpose flour
  • 2 tsp mint extract
  • 3 drops blue coloring + 10-15 drops green coloring
  • 1 1/2 cups chocolate chips*

Instructions

  1. Cream together sugar and butter. Add egg, sour cream and pudding mix. In a small bowl, combine flour, salt & baking soda. Incorporate flour mixture into the pudding mixture and mix until well combined. Add mint extract and food coloring until desired color is achieved.

  2. Add in chocolate chips. *I used 3/4 cup chocolate chunks, 3/4 cup regular chocolate chips and 1/2 cup Andes baking bits. Any combination is wonderful, but note that while the Andes mint baking pieces add an incredible flavor, they kind of disappear in the cookies. So add them in addition to the 1 1/2 cups chocolate chips, if you opt to put them in!

  3. Drop by rounded tablespoonfuls onto greased cookie sheet.

  4. Bake at 375 for 10 minutes. Transfer to a cooling rack and enjoy!

These Mint Cookie Fudge Cups are made with a delicious mint cookie filled with a creamy thick fudge filling! I love the mint/chocolate combination and these flavors come together amazingly in these Mint Cookie Fudge Cups. The fudge filling is soooo yummy – my kids were trying to eat it by the spoonful! The cookie dough was inspired by Jessica’s Mint Chocolate Pudding Cookie recipe. I topped the cookie cups with some Andes Mint baking chips and I couldn’t believe how quickly these little treats disappeared! See the recipe for Mint Cookie Fudge Cups here. 

 

Mint Oreo Pudding Cookies are soft, chewy and full of mint flavor, Oreo pudding mix and crumbled Oreo cookies! The mint and chocolate flavor combination is a winner in these amazing cookies!

Mint Oreo Pudding Cookies are absolutely amazing! Several years ago, I began making these Cookies and Cream Cookies that have Oreo Pudding in the recipe and they have been one of my favorite cookies ever since. I was ready to make them a few days ago and decided to make a mint version since I had some Mint Oreos in the cupboard. Plus, it’s getting close to St. Patrick’s Day and I’m sure I will need to make a green treat at some point in the near future! I just added a little bit of mint and food coloring to my original recipe and the results did not disappoint at all. See the recipe for Mint Oreo Pudding Cookies here. 

 

Mint Chocolate Cupcakes made easy with boxed cake mix hacks! Dipped in chocolate glazed & topped with smooth mint buttercream, it’s a fabulous cupcake recipe. Mint Chocolate Cupcakes are easily one of my favorite cupcake recipes ever. Don’t have time to make them from scratch? I completely understand! So much so that I used a box cake mix! I include 4 easy steps that will help your Boxed Cake Mix Taste Better. Rainbow Jello Parfaits are so festive and fun, especially for your kids on St. Patrick’s Day! You only need two basic ingredients to make these…jello and yogurt! Rainbow Jello Parfaits are something I decided to experiment with this year – I usually don’t go all out for St. Patrick’s Day at my house, but I do try to do something fun for my kids. These layered Jello treats are so easy, and if you pick the right colors, it looks just like a rainbow!  You do have to give yourself a day to make them just to allow all of the layers to set, but each layer only takes a few minutes to make so it’s not as hard as it may seem! Double Fudge Mint Cookies: Butter With A Side of Bread

Dubbed Leprechaun popcorn, it is an easy to make green and white chocolate covered popcorn snack with green mint M&Ms and St. Patrick’s day sprinkles. This St. Patrick’s Day Popcorn recipe is quite easy to make. They taste just like Andes Mints! Mint Chocolates are one of my favorite treats! It’s my favorite flavor combination so I love making mint chocolate desserts for the holidays. This recipe couldn’t be much easier! I used my recipe for Tiger Butter as inspiration. It’s a simple swirled chocolate confection that’s not a fudge but yet not a bark either. The Mint Chocolates are soft, like fudge, but much thinner, which makes them easy to eat as they’re not overly rich. They’re the perfect addition to your neighbor gift plates, as they’re so pretty. I saw this fun idea for Pretzel Shamrocks and knew I had to make them! I’m not a fan of making “pops” though because they cost more and it seems like I never have the pop sticks on hand when I want them. So I adapted her idea and the results came out darling! I dug up a recipe I posted years ago on my other blog because it’s too good not to share. These Mint Brownies are killer. The brownie recipe itself is amazing but once you add the two types of layered frosting… heavens they’re good! You can cheat and use boxed brownie mix (just don’t tell me about it) and a tub o’ chocolate frosting from the store, but you must, must, must make the mint frosting exactly as stated. It is amazing.
