MINT CHOCOLATE PUDDING COOKIES
Mint Chocolate Chip Cookies made with pudding mix, mint extract & chocolate chips. Lovely cookie recipe perfect for those who love mint chip ice cream!

Ingredients
- 1 cup sugar
- 1/2 cup butter softened (1 stick)
- 1 egg
- 1/2 cup sour cream
- 1 small box instant vanilla pudding mix 3.4 oz
- 1/2 tsp salt
- 1/2 tsp baking soda
- 2 cups all-purpose flour
- 2 tsp mint extract
- 3 drops blue coloring + 10-15 drops green coloring
- 1 1/2 cups chocolate chips*
Instructions

Cream together sugar and butter. Add egg, sour cream and pudding mix. In a small bowl, combine flour, salt & baking soda. Incorporate flour mixture into the pudding mixture and mix until well combined. Add mint extract and food coloring until desired color is achieved.

Add in chocolate chips. *I used 3/4 cup chocolate chunks, 3/4 cup regular chocolate chips and 1/2 cup Andes baking bits. Any combination is wonderful, but note that while the Andes mint baking pieces add an incredible flavor, they kind of disappear in the cookies. So add them in addition to the 1 1/2 cups chocolate chips, if you opt to put them in!

Drop by rounded tablespoonfuls onto greased cookie sheet.

Bake at 375 for 10 minutes. Transfer to a cooling rack and enjoy!
These Mint Cookie Fudge Cups are made with a delicious mint cookie filled with a creamy thick fudge filling! I love the mint/chocolate combination and these flavors come together amazingly in these Mint Cookie Fudge Cups. The fudge filling is soooo yummy – my kids were trying to eat it by the spoonful! The cookie dough was inspired by Jessica’s Mint Chocolate Pudding Cookie recipe. Mint Oreo Pudding Cookies are absolutely amazing! Several years ago, I began making these Cookies and Cream Cookies that have Oreo Pudding in the recipe and they have been one of my favorite cookies ever since. I was ready to make them a few days ago and decided to make a mint version since I had some Mint Oreos in the cupboard. Plus, it’s getting close to St. Patrick’s Day and I’m sure I will need to make a green treat at some point in the near future! I saw this fun idea for Pretzel Shamrocks and knew I had to make them! I’m not a fan of making “pops” though because they cost more and it seems like I never have the pop sticks on hand when I want them. So I adapted her idea and the results came out darling! I dug up a recipe I posted years ago on my other blog because it’s too good not to share. These Mint Brownies are killer. The brownie recipe itself is amazing but once you add the two types of layered frosting… heavens they’re good!
