Cranberry Jello Salad is a staple to our holiday spread! I love the festive flavors. This version is perfect because it’s not too sweet and accompanies ham and turkey beautifully. It’s a very versatile recipe too- if you can’t find cranberry jello, feel free to use raspberry or cherry instead. You can also use a different flavor of pudding. I like to use white chocolate because of both the delicious flavor and the white color looks so pretty contrasted with the red jello. If you can’t find white chocolate pudding mix, you can use french vanilla or even regular vanilla instead.

My version of Cranberry Jello Salad doesn’t use cream cheese, which is intentional! I like the flavor, but I like a lighter taste to my jello salads, so I opt for whipped topping combined with crushed pineapple and pudding mix instead.

I topped my Cranberry Jello Salad with lovely sparkling sugared cranberries, a recipe I found on my friend Gina’s site. Check them out! They’re easy to make and I think they add a very festive element to the salad. She soaks her cranberries for 3 days, but I think you can make a quick version and just soak them overnight. Bonus too- they taste amazing! They’ve got a sweet crunchy exterior and pop with a fresh, bright flavor when you bite down. Yum.

Crust:

  • 2 cups crushed pretzels
  • 3/4 cup melted butter
  • 3 TBSP sugar

Filling:

  • 1 20-oz can crushed pineapple (NOT drained!)
  • 1 3-oz box White Chocolate pudding mix
  • 1 8-oz tub whipped topping*

Topping:

  • 1 3-oz box cranberry Jello
  • 1 cup boiling water

  1. Preheat oven to 400 degrees F. Spray a 9×13 pan with non-stick spray.
  2. Combine crushed pretzels, sugar and melted butter in pan. Gently stir to combine and spread around pan evenly. Bake for 10 minutes and cool completely.
  3. Pour entire can of crushed pineapple (with juice!) into a medium sized mixing bowl. Sprinkle white chocolate pudding mix on top and stir until completely incorporated. Fold in whipped topping.
  4. Transfer mixture to 9×13 pan, spreading on top of baked pretzels, making sure mixture reaches all of the edges. Set pan in fridge to keep cool while you mix the jello.
  5. Combine 1 cup boiling water with box of cranberry jello. Stir until jello is completely dissolved. Add in the entire can of whole berry cranberry sauce and stir until combined. Pour mixture on top of pineapple-whipped topping. 
  6. Cover salad and refrigerate at least 3-4 hours, until salad is completely cooled and set. Top with sugared sparkling cranberries, if desired. (Find the recipe here https://www.kleinworthco.com/sparkling-cranberries/ ) Cut squares to serve. Store leftovers in fridge.

*You can substitute 2 cups of fresh whipped cream in placeof the whipped topping in this recipe.

Easy Raspberry Jello Salad is one of those recipes that only takes a few minutes to make, and everyone absolutely loves it! I love adding fruit to jello, but this is the first jello recipe that I’ve made where you add pie filling to the jello and now I can’t believe I didn’t try this sooner. Using pie filling in the recipe is so convenient, especially during seasons where fresh fruit is hard to find!

Easy Raspberry Jello Salad is made with raspberry pie filling and jello and then is topped with a creamy raspberry layer. Only four ingredients for an easy jello recipe that works as a side dish or a dessert!

The top layer of the jello salad is made by combining Cool Whip (a non-dairy whipped topping with two containers of raspberry yogurt. The raspberry flavor of the yogurt is perfect and the whipped topping makes for the perfect consistency.

Can I make jello salad with other flavors of Jello?

One of my favorite things about this recipe is that it is so versatile! You can use peach jello with peach pie filling and peach yogurt, strawberry pie filling with strawberry jello and strawberry yogurt, you get the idea! Or if you want to get really crazy, you can mix and match the flavors! Peach jello with raspberry pie filling? With strawberry yogurt in the topping? Use whatever flavors you’d like – it all tastes delicious!

Ingredients in Easy Raspberry Jello Salad

  • 1 large box raspberry Jello (6 oz)
  • 2 cups boiling water
  • 1 can raspberry pie filling
  • 8 oz. Cool Whip, thawed
  • 2 small containers raspberry yogurt

How to make Easy Raspberry Jello Salad

Add 2 cups of boiling water to the raspberry jello and mix for a couple of minutes until the jello is dissolved. Let the jello sit for about 5-7 minutes to cool and then stir in the pie filling. Pour the jello into a 9X13 and refrigerate until set (about 3-4 hours).

When the jello layer is set, stir the Cool Whip and yogurt together and then spread on top of the jello. The jello can be served immediately or placed in the refrigerator until ready to serve.

Can you replace the Cool Whip in Jello Salad?

If you can’t find Cool Whip where you live or you prefer not to use it in recipes, you can use stabilized whipped cream instead. If you just use regular whipped cream, the consistency will be too light and the cream will not hold up very well when mixed into the jello salad. It’s very simple to make your own stabilized whipped cream and it just takes a few minutes!

How do you make stabilized whipped cream?

To make stabilized whipped cream, you will need the following ingredients:

  • 4 ounces of cream cheese (softened to room temperature)
  • 1/3 cup powdered sugar
  • 1 tsp vanilla
  • 1 cup heavy whipping cream
  1. Beat the cream cheese with the powdered sugar and vanilla until soft and smooth.
  2. In a separate bowl, beat the whipping cream just until soft peaks form.
  3. Add the cream cheese mixture to the whipped cream and beat until stiff peaks are formed. Store in the refrigerator until ready to use.

Patriotic Layered Jello Salad is a fun and festive dessert (or side dish) that we love to make for the 4th of July (and lots of other times too)! My family absolutely loves this jello recipe and it really isn’t very hard to make. The raspberry and blueberry layers are so delicious together and the creamy layer in between is absolutely amazing! Just a hint of vanilla flavor and it pairs so well with flavors of the fruity layers.

How long does it take to make a layered jello salad?

Layered jello salad does take a bit of time to make because you have to allow each layer to set up before adding the next layer, but each layer comes together in just a few minutes. Each layer takes about 1-2 hours to set up so I like to make this recipe a day in advance just to make sure each layer has plenty of time to set up.

Don’t try to add a layer before the previous layer sets up completely or you won’t get the definitive layers that make this dessert so pretty! It would probably still taste delicious, but may look more purple than the red, white and blue you are hoping for!

Ingredients in Patriotic Layered Jello Salad

Raspberry Layer

6 oz pkg. raspberry Jello

2 cups boiling water

12 oz frozen raspberries

Creamy Vanilla Layer

2 cups whipping cream

1 cup sugar

2 packets of Knox unflavored gelatin

1/4 cup cold water

16 oz. sour cream or plain yogurt

2 Tbsp vanilla extract

Blueberry Layer

3 oz. pkg. Berry Blue Jello

2 cups boiling water

1 can blueberry pie filling

How to make Patriotic Layered Jello Salad

Raspberry Layer: 

Mix raspberry Jello with boiling water for 1-2 minutes or until the jello is completely dissolved. Add the frozen raspberries and stir to combine. Pour into a 9X13 dish. Refrigerate until completely set (1-2 hours).

Creamy Vanilla Layer: 

In a small bowl, stir the unflavored gelatin into the cold water. Set aside.

In a saucepan over medium heat, mix the cream and sugar together for about 3-4 minutes until the mixture is hot. Add the unflavored gelatin/water mixture and continue to stir the mixture for about 2 more minutes.

Remove from heat and add the sour cream and vanilla extract. Whisk the mixture until completely smooth. Pour this layer very gently on top of the set raspberry layer. Refrigerate until firm (1-2 hours).

Blueberry Layer:

Add the blue jello to the boiling water and mix for about 1-2 minutes or until the jello is completely dissolved. Add the blueberry pie filling to the jello and mix until well combined. Pour on top of the creamy layer and refrigerate until completely set, about 1-2 hours.

Slice the layered jello into squares and serve. Store any leftovers in the refrigerator.

What type of fruit do you use in Patriotic Layered Jello Salad?

The recipe calls for frozen raspberries in the raspberry layer and blueberry pie filling in the top layer. This works very well, but you could definitely modify this a bit if needed. Fresh raspberries would work great in the bottom layer.

You can use fresh blueberries in place of the blueberry pie filling in the top layer, but just know that your top layer will end up being much more of an electric blue Jello color than the dark navy blue color that comes from using the pie filling.
