Pancarré pie with ham and mushrooms: a fanciful idea for a quick and tasty dinner, this savory pie made up of 2 layers of bread and stringy cheese, ham and mushrooms is easy to make. In the oven for 15 minutes and dinner is ready.

Ingredients for 4 people

  • 12 slices of bread
  • 400 gr of champignon mushrooms (I used the canned ones)
  • 2 tablespoons of grated Parmesan
  • 200 gr of cooked
  • 200 gr of mozzarella
  • 1 egg
  • 1/2 glass of milk
  • oil
  • Salt and Pepper To Taste.

How to make Pancarré cake with ham and mushrooms

  1. Let the mushrooms sauté in a pan with a drizzle of oil and a clove of garlic. After 10 minutes the mushrooms will be ready. Let's keep them aside.
  2. Cut the cheese we will use into cubes or strips (fior di latte or scamorza cheese or other cheese suitable for filling). We remove the crust from the slices of bread that we will use. And let's keep aside.
  3. In a bowl, beat an egg and add less than half a glass of milk, a pinch of salt and pepper.
  4. Put the slices of bread on the bottom of a baking sheet after removing the crust, brush with the egg and milk.
  5. Let's proceed with the various layers: distribute the mushrooms, then the mozzarella and the ham. We repeat the procedure for another layer: bread, brush with egg and milk and distribute the mushrooms, mozzarella and ham.
  6. Complete with the last layer of Pancarré only, brush with egg and add a sprinkling of grated Parmesan and a few pieces of mozzarella on the surface, or a few flakes of butter.
  7. We bake at 180 degrees for 15 minutes.

Scallops with mushrooms are a second course based on pork, quick and easy!

Here's how to prepare it:

start cleaning the champignon mushrooms and cut them into slices. Also slice half an onion.

Sprinkle the slices with a glass of red wine.

Stuffed champignon mushrooms: a very simple recipe to prepare, to be served both as an appetizer and as a side dish for meat main courses. The filling can be simple as in this case, using the stems of the mushrooms, or with potatoes, speck and cheese. Here is the simpler version that I really like!

Ingredients for 2 people

  • 4 large button mushrooms
  • 3 tablespoons of breadcrumbs
  • 2 sprigs of parsley
  • 2 tablespoons of oil
  • salt

The first thing to do is to detach the stem from the mushroom head. We cut the base of the mushrooms (the one most in contact with the earth) and eliminate it, instead we keep the stems aside.

How to clean the mushrooms: with a damp cloth, we clean the mushrooms (both the stems and the heads), it is not necessary to wash the mushrooms under running water it only makes the mushroom absorb more water! At most we scratch with a small knife the parts that are still too dirty if present.

Put the mushroom stems, parsley, salt, garlic clove, breadcrumbs and 2 tablespoons of oil in a mixer.

Fill the mushroom heads with the filling, add a drizzle of oil on the surface and bake at 180 ° for 15/20 minutes, at the end of cooking add a little salt to the surface.

WINE PAIRING: This dish requires a delicate, fresh wine with good acidity. A German Riesling with a few years behind it is perfect. Or a Ligurian Riviera di Ponente Pigato.
