Fruit Salad is the perfect side dish for just about any meal. I love serving fruit salad any time of the year; you just use seasonal fruits. The Honey Lemon glaze that you toss with the fruit salad is wonderful. It’s the perfect balance of sweet and tart and the lemon keeps the fruit from turning colors.

If you look closely, you’ll see that quite a bit of my fruit salad consists of fruits that either don’t require cutting (berries! I love berries!) or are fruits that can be cut up ahead of time (pomegranate, kiwi, cantaloupe, oranges, pineapple.) Apples and bananas really can’t be cut up ahead of time because they turn colors of course.

Ingredients to makeFancy Fruit Salad

Here’s what you’ll need to make our Fancy Honey Lemon Glazed Fruit Salad:

–2 tsp vanilla

–3-4 TBSP honey

–1 TBSP lemon juice

–1 tsp lemon zest (you will use 1 lemon for the juice and the zest)

–1/4 cup orange juice

about 16 cups of fruit, washed & cut (yields about 4.5 quarts of cut fruit)

How to Make Fancy Fruit Salad

After you assemble the fruit you’re going to use, mix the ingredients for the dressing. I used raw honey, so to make it mix easier with the other ingredients, I microwaved it for about 20 seconds. Zest the lemon first, then cut it in half and juice it. Whisk the ingredients together until it’s smooth and the honey is incorporated. If you’re having a hard time with our honey and it still looks separated, then microwave it for another 10-15 seconds.
Begin adding your fruit to a large bowl. You really don’t need to add the dressing until you add cut-up fruit that browns- apples and bananas. So if you cut those fruits up first, add the dressing immediately and toss lightly to coat the fruit. If you don’t add them until last, then pour the dressing in the salad at the end.

What kind of fruits can be use in fruit salad?

Fruit selection plays a big part in how “fancy” your fruit salad ends up. I’ll list out some more common fruits, then list some less common (but still easily recognized) fruits. Depending on where you live, you might have a wide variety of fruits available- have fun! Aiming for a half & half ratio of common/ less common will help take your fruit salad up a notch or twelve. Also, try and get a variety of colors in your salad so that it will be gorgeous! When I want a fruit salad to look prettier, sometimes I’ll do mostly apples & bananas, then just add a wide variety of berries and suddenly it’s amazing.

Common fruits: apples, bananas, grapes, cantaloupe, strawberries, pears, peaches, watermelon, oranges

Less common fruits: Blackberries, blueberries, kiwi, pomegranate “seeds”, fresh pineapple, cherries, mango, papaya, grapefruit

Can I use raw honey in fruit salad?

Yes, you can use raw honey in fruit salad. Often it just needs 10-15 seconds in the microwave to de-crystalize the raw honey. Then just proceed with the rest of the recipe.

Can I make fruit salad ahead of time?

Yes, you can make fruit salad 4-6 hours ahead of time. It really just depends on what fruits you use in your salad, as some keep fresh longer than others. Just to be safe though, I recommend making it at most 4-6 hours ahead of when you plan to serve it.

There is actually no way to keep fruit salads fresh for days, but you can make fruit salad and eat it the the next day.

At times I also make fruit salad and store some for the next day. The biggest problem is that some fruits like apples and bananas oxidize and turn brown quickly, while fruits like watermelon goes mushy when left too long. To counteract that, add a little lemon or lime juice to your fruit salad to stop fruits from oxidizing, and keep your fruit salad in the refrigerator to keep it from going mushy. This should keep your salad “fresh” for at least the following day.

Another great idea is to separate any leftover fruit in baggies to freeze and be used in smoothies the next morning!

You all know I love a good sheet pan meal, so this book is full of them. This sheet pan barbecue chicken dinner recipe is one of my favorites. Funnily, it’s probably one of those more complicated recipes in the book, even though it’s seriously easy to make.

What’s so complicated about it? Well, besides a sheet pan, you’ll also need a bowl to make the mango salad (gasp). Honestly, I usually just mix the salad right on one of my dinner plates. It’s a useful little hack that saves me from having to wash an extra dish. Have I ever mentioned how much I hate doing dishes? 

There’s a recipe for homemade barbecue sauce in the book, but store-bought sauce is totally fine. That’s what I used when I made this last week.

Ingredients

FOR THE CHICKEN AND POTATOES

  • 4 red potatoes, cut into wedges
  • 1 tablespoon extra-virgin
  • olive oil
  • Celtic sea salt
  • Freshly ground black pepper
  • 4 boneless, skinless chicken thighs
  • 1/4 cup Maple Barbecue Sauce (page 136) or your favorite barbecue sauce

FOR THE MANGO SALAD

  • 1 mango, peeled and diced
  • 1 jalapeño pepper, seeded and minced
  • 1/2 red onion, minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Celtic sea salt

Instructions

!TO MAKE THE CHICKEN AND POTATOES

  1. Preheat the oven to 400°F.
  2. Arrange the potato wedges in a single layer on one side of a sheet pan. Drizzle with olive oil and season with salt and pepper.
  3. Place the chicken thighs on the other side of the sheet pan. Brush the chicken with barbecue sauce. Bake for 25 to 35 minutes until the chicken is cooked through and !the potatoes are soft.

TO MAKE THE MANGO SALAD

  1. While the chicken cooks, in a medium bowl, stir together the mango, jalapeño, red onion, cilantro, lime juice, and a pinch of salt. Mix well. Let stand at room temperature for 5 minutes.

Repurpose tip: Make a double batch of mango salad—it’s also great on tortilla chips or as an addition to Fajita Burrito Bowls

Originally, I thought the addition of the clementine segments would make the salad overly sweet, but that wasn’t the case at all! With the tart lemon, salt, pepper and the funk of feta cheese… yum. This little salad was a big powerhouse of goodness.

You can’t go wrong when there’s feta cheese involved. And that’s just a factual bit of truth. When this was served for dinner, it became a quick QUICK family favorite. Everyone had only good things to say about it. Which I have to say, was a bit of a shock to me.!
