Let’s start from salted cod: I purchased a beautiful cod fillet already soaked from my trusted fishmonger to make sure it had been desalted to the right point. To make the dish even more appetizing I added capers (previously desalted) and pitted Taggiasca olives (which I love). A little fresh parsley to complete everything and I assure you that the result is spectacular!

To prepare the pralined almonds, start preparing a tray lined with baking paper. In a steel pan, pour the almonds, sugar and water at room temperature. Place the pan on the stove over medium heat, stirring constantly. The sugar will begin to melt, then begin to boil, until a white film forms around the almonds.

This is the time to reduce the flame, and wait until the sugar begins to caramelize. As soon as they have taken on an amber color, place the almonds on the baking paper, well spaced between them. Wait for it to cool completely and your praline almonds are ready to be enjoyed.

Spaghetti with garlic, oil, chilli pepper and potatoes

Ingredients for 4 people

  • 350 g of Spaghetti Garofalo
  • 4 Potatoes
  • 2 cloves of garlic
  • 2 hot chillies
  • Parsley, salt, extra virgin olive oil to taste

Preparation

Start by peeling potatoes and cutting them into cubes. Place the cubes in cold water and bring them to the boil. Add the salt and cook for about ten minutes. Next, add the spaghetti and continue cooking for another 8/10 minutes, following the instructions on the package.

Meanwhile, in a pan, heat plenty of extra virgin olive oil. Add the segments ofgarlic, The chili cut into pieces and a pinch of salt. Heat everything up for a couple of minutes and then remove from the heat.

Once the potatoes are cooked and the spaghetti are al dente, drain them and transfer them to the pasta pan together with the prepared sauce. Mix well and then serve the dish with a sprinkling of parsley and chilli powder. Those who like it can also add some grated parmesan. Enjoy your meal!
