Tomato soup is pure comfort food for me! It’s one of those foods that I enjoy on a cold day with some crusty French bread. This version comes together in a snap and is so full of flavor, you’ll be glad you have leftovers.
Ingredients for Tomato Basil Soup
Here’s what you’ll need to make this recipe:
San Marzano Style Tomatoes
I recommend using Hunt’s San Marzano Style tomatoes- they’re brand new! San Marzano style tomatoes are a sweeter tomato that are low in acidity, with a thick juice that makes them perfect for cooking. Hunt’s San Marzano Style Tomatoes are all-natural and steam peeled and have a bright, tangy fresh flavor.
Hunt’s San Marzano Style Tomatoes are sold in a large 28-oz can and come in three flavors: Plain, Italian, and spicy red pepper.
Fresh or Dried Basil
I love using fresh basil leaves for this soup, but in a pinch you can use dried basil. Fresh basil has a wonderful flavor that is difficult to replicate, even in the dried herbs.
Butter and Cream
Both ingredients seem a little odd for tomato soup, but please don’t leave them out! The butter adds a velvety texture and the cream adds a richness that just tastes lovely. If you don’t want to use heavy cream, you can add milk, sour cream or plain Greek yogurt instead.
Remaining ingredients
You’ll also need chicken broth, a bit of brown sugar, and onion powder. That’s it!
How to make Tomato Soup
Making this Tomato Basil soup recipe is easy! Here’s what you’ll need to do:
Prep the tomatoes
First, lightly drain tomatoes. The liquid is thicker in Hunt’s San Marzano Style Tomatoes but I still drained a bit out. I opened the can, then used the lid to stop the tomatoes and drained for just a few seconds.
Pour the tomatoes into large 2 quart bowl. (Make sure it can still fit in the microwave!)
Add remaining ingredients & heat
Add in broth, brown sugar, onion powder & basil leaves. Gently stir. Cover & microwave for 5 minutes on high.
Add butter
Remove cover. Add in butter. Let sit 3-4 minutes, until melted.
Puree Soup
Puree soup using an immersion blender for 1 minute. Add cream if desired. Serve, garnished with an additional drizzle of cream & fresh basil.

- 1 cup chicken broth
- 1 TBSP brown sugar
- 2 tsp onion powder
- 8-10 fresh basil leaves*
- 1/4 cup butter
- 1/4 cup heavy cream optional

I topped my soup with a drizzle of heavy cream and some fresh basil leaves. I also love topping it with croutons, Parmesan cheese, and soup crackers.
